Super Simple Crepes - Elizabeth

Crepes

These crepes are so quick, simple, relatively healthy & can be made with an endless array of fillings.

Super Simple Crepes

1 c AP flour
1 c water
1 teaspoon cinnamon
1 egg
1 tablespoon sugar

Makes 4-6 crepes

Mix all the ingredients together.

Heat a large skillet & melt a tablespoon of butter. Pour about 2 tablespoons [depending on the size of the skillet] of batter in the skillet, then swirl it around to the edges. It should be thin and should cook through in under a minute. Once the middle is cooked, flip and cook until slightly brown on both sides. Remove.

I usually keep the stack of done crepes under a plate to keep them warm.

Repeat until all the batter is used up. Add more butter to the skillet in between if the crepes are sticking.

Put your filling in the middle, then fold up the sides - you can add more filling to the top & sprinkle on some powdered sugar if you're feeling especially ambitious.
